Development of a Behavioral Modification Program on Food Consumption Using Carbohydrate Counting to Reduce the Risk of Diabetes Among At-Risk Health Personnel in Lamduan District, Surin Province

Abstract

     This quasi experimental research aimed to develop and evaluate the effectiveness of a behavioral modification program on food consumption using carbohydrate counting to reduce the risk of diabetes among at-risk health personnel in Lamduan District, Surin Province. The sample consisted of 40 at-risk health personnel selected through purposive sampling based on the specified inclusion criteria. The research instruments included an 8-week behavioral modification program using carbohydrate counting, a general information questionnaire, a food consumption behavior questionnaire, a carbohydrate counting knowledge test, a satisfaction assessment form, weighing scales, height measurement equipment, and a fasting blood sugar testing device. Data were analyzed using descriptive statistics and Paired t-test.

     The results revealed that after participating in the program, the participants showed significant improvement in carbohydrate counting knowledge scores, increasing from 10.85 to 17.42 points, and food consumption behavior scores, increasing from 38.27 to 50.63 points. In addition, fasting blood sugar levels decreased from 112.48 to 101.26 mg/dL, and body mass index decreased from 27.14 to 25.98 kg/m². All differences were statistically significant at the .05 level. Overall satisfaction with the program was at the highest level, with a mean score of 4.64 and a standard deviation of 0.48.
