DEVELOPMENT OF A FOOD LITERACY PROMOTION MODEL AMONG ELDERLY MUSLIMS IN NARATHIWAT PROVINCE

This research and development study aimed to develop a model to promotion food literacy among elderly Muslims in Narathiwat Province. The study was conducted in three phases. Phase 1 synthesizing a food literacy promotion model by examining the situation, context, and dietary behaviors of 389 Muslim older adults and 20 relevant personnel responsible for elderly clubs, and using the findings to draft the prototype. Phase 2 developing the food literacy promotion model through two small-group trials involving a total of 10 participants, which achieved the research objectives. Phase 3 evaluated the effectiveness of the food literacy promotion model, consisting of three models: (1) Culture-Based Health Communication, (2) Modify Behavior, Improve Health, and (3) Health Network Pathways. The sample comprised an experimental group and a comparison group, with 30 participants in each group, over an 8-week period. Data were analyzed using descriptive statistics and repeated measures analysis of variance.
The results of the repeated measures analysis of variance indicated that the mean scores of food literacy and eating behaviors differed significantly across groups, over time, and in the interaction between group and time. The experimental group demonstrated a continuous increase in scores following the intervention, whereas no significant change was observed in the comparison group. Furthermore, when the study was expanded to 13 districts, it was found that the food literacy of elderly Muslims in Narathiwat Province, from February 2026 to June 2026, after 8 months of implementation, was at the highest level overall and in each aspect. A comparison of food literacy of elderly Muslims in Narathiwat Province, from February 2026 to June 2026, before implementation, after 4 months, and after 8 months, showed statistically significant differences at the .05 level. The scores after 8 months were the highest in all aspects. Regarding the impact on the health status of the elderly, it was found that the group at risk of chronic diseases accumulated an average of 30.61% per year. In the current year, there were 1,466 elderly people at risk of non-communicable diseases, representing 8.21%, a decrease from the group at risk of chronic diseases accumulated an average of 22.40% per year.
