Analysis of aflatoxin levels in commercial red curry paste sold in Thailand

Abstract

     A Survey research by cross-sectional study was conducted between February and March 2026 to investigate the occurrence of aflatoxins in commercially available ready-to-use red curry paste products marketed in Thailand. A total of 24 samples, including both sealed-packaged and bulk-sold products, were randomly collected from three distribution channels: supermarkets, traditional fresh markets, and online platforms. The concentrations of total aflatoxins and individual aflatoxin subtypes (AFB1, AFB2, AFG1, and AFG2) were determined using High-Performance Liquid Chromatography (HPLC).

      The analytical results showed that the majority of samples (87.50%) contained no detectable aflatoxins. Only three samples (12.50%) were positive for Aflatoxin B1 (AFB1), which was detected at trace levels (<0.70 µg/kg). No other aflatoxin subtypes were detected. All detected concentrations were well below the maximum permissible limit established by the Thai Ministry of Public Health, which allows total aflatoxin contamination of up to 20 µg/kg in food products.
