A MODEL FOR PRESERVING WISDOM IN PALM SUGAR PROCESSING AMONG VILLAGERS IN NOMG KHAO SUBDISTRICT THA MUANG DISTRICT KANCHANABURI PROVINCE

Abstract

This research aims to 1) Study the wisdom of using palm sugar in Nong Khao Subdistrict Tha Muang District, Kanchanaburi Province, 2) Develop palm sugar processed products from the wisdom of local people in Nong Khao Subdistrict, Tha Muang District, Kanchanaburi Province, and 3) Propose a model for preserving palm sugar processed products from local wisdom. This is a participatory action research. The data were collected from 25 researchers and experts by selecting them specifically using an interview form. The data was analyzed in terms of content and presented in a descriptive way through storytelling. The research results found that 1) Study of wisdom in using the sugar palm including roots, trunks, palm fruits, palm leaves, and flower clusters as ingredients in both savory and sweet dishes such as palmyra curry, candied palm fruit, leaves used for thatching roofs, trunks and leaf stalks used to make chairs, in terms of handicrafts, young palm leaves are used to make baskets, pillows, mats, and palm wood is used to make furniture, in terms of agriculture, fresh palm fruits are used to feed cows, and trunks and leaves are used to make animal pens, in terms of energy, as fuel for making alcoholic sugar, in terms of industry, they are used to make activated carbon for use in air filters, 2) Development of processed palm sugar products from local wisdom by designing from the structure of the packaging, the use of colors, illustrations, composition the use of brand letters, and the meaning, the design of the logo that reflects the identity and way of life of the community, 3) The conservation model of palm sugar processing from local wisdom in Nong Khao Subdistrict, Tha Muang District, Kanchanaburi Province, “TANS Model” consists of T = (Technique) which is a technique of learning together, A = (Action) which is taking action N = (Networking) which is a network of participation, and S = (Sustainable) which is sustainable.
