อิทธิพลของความแตกต่างทางวัฒนธรรมที่มีต่อพฤติกรรมการบริโภคอาหารริมทางของนักท่องเที่ยวชาวต่างชาติในเขตกรุงเทพมหานคร

บทคัดย่อ

การวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาความแตกต่างทางวัฒนธรรม ลักษณะทางประชากรศาสตร์ และถิ่นพำนักของนักท่องเที่ยวชาวต่างชาติที่มีต่อพฤติกรรมการบริโภคอาหารริมทางในเขตกรุงเทพมหานคร และเพื่อศึกษาอิทธิพลของความรู้ด้านอาหาร ประสบการณ์ด้านอาหารในอดีต และทัศนคติที่มีต่อพฤติกรรม เป็นการวิจัยเชิงปริมาณ เก็บข้อมูลจากนักท่องเที่ยวชาวต่างชาติ จำนวน 400 คน ด้วยแบบสอบถาม และวิเคราะห์ข้อมูลด้วยสถิติเชิงพรรณนา ได้แก่ ค่าเฉลี่ยและส่วนเบี่ยงเบนมาตรฐาน และสถิติ One-Way ANOVA และ Binary Logistic Regression ผลการวิจัยพบว่า นักท่องเที่ยวมีความรู้ ประสบการณ์ และทัศนคติอาหารริมทางอยู่ในระดับมากทุกด้าน โดยเฉพาะด้านความเพลิดเพลินและความน่าจดจำของประสบการณ์ ผลการทดสอบด้วย One-Way ANOVA พบว่า มีเพียงถิ่นพำนัก/ทวีปเท่านั้นที่มีอิทธิพลต่อความถี่ในการบริโภคอาหารริมทางอย่างมีนัยสำคัญทางสถิติ (Sig. = .045) ในขณะที่เพศและอายุ ไม่มีอิทธิพลอย่างมีนัยสำคัญทางสถิติ ส่วนผลการทดสอบด้วย Binary Logistic Regression พบว่า โมเดลโดยรวมของความรู้ ประสบการณ์ และทัศนคติไม่มีนัยสำคัญทางสถิติในการทำนายพฤติกรรม (Sig. = .129) เมื่อพิจารณารายตัวแปร พบว่า ทัศนคติมีความสัมพันธ์อย่างมีนัยสำคัญทางสถิติในทิศทางตรงกันข้ามกับที่คาดไว้ (B = -.521, Sig. = .030) ซึ่งสะท้อนช่องว่างระหว่างทัศนคติกับพฤติกรรมจริง การศึกษาชี้ให้เห็นว่าถิ่นพำนัก/วัฒนธรรมควรเป็นเกณฑ์หลักในการออกแบบกลยุทธ์การตลาดของผู้ประกอบการและหน่วยงานท่องเที่ยว มากกว่าการแบ่งกลุ่มตามเพศหรืออายุ เพื่อเสริมสร้างความเชื่อมั่นด้านสุขอนามัยแก่นักท่องเที่ยวและลดช่องว่างระหว่างทัศนคติกับพฤติกรรมจริง ซึ่งงานวิจัยนี้ได้เสนอกรอบแนวคิดวิจัยครั้งต่อไปโดยเพิ่มความตั้งใจเชิงพฤติกรรมเป็นตัวแปรส่งผ่านระหว่างทัศนคติกับพฤติกรรมจริง และให้ถิ่นพำนัก/วัฒนธรรมเป็นบริบทที่กำกับความสัมพันธ์
