บทคัดย่อ

การวิจัยครั้งนี้ มีวัตถุประสงค์เพื่อสร้างรูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา ในการดำเนินการวิจัย แบ่งออกเป็น 3 ขั้นตอน ดังนี้ ขั้นตอนที่ 1 การศึกษาแนวทางการบริหารโรงแรมในสถานศึกษา โดยการศึกษาแนวทางการบริหารโรงแรมในสถานศึกษาที่มีวิธีการปฏิบัติที่ดี จำนวน 3 แห่ง รวมทั้งสัมภาษณ์ผู้ทรงคุณวุฒิ จำนวน 4 คน วิเคราะห์ข้อมูลโดยการ วิเคราะห์เนื้อหา ขั้นตอนที่ 2 การสร้างรูปแบบการบริหารโรงแรมในสถานศึกษา โดยนำข้อมูลจากขั้นตอนที่ 1 มายกร่างรูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา และตรวจสอบความเหมาะสมของรูปแบบฯ ด้วยการสนทนากลุ่มผู้ทรงคุณวุฒิจำนวน 9 คน ขั้นตอนที่ 3 การประเมินความเป็นไปได้ของรูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา วิเคราะห์ข้อมูลโดยการหาค่าเฉลี่ยและส่วนเบี่ยงเบนมาตรฐาน

ผลการวิจัย พบว่า รูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา ที่สร้างขึ้น ประกอบด้วย 3 องค์ประกอบ ได้แก่ 1) โครงสร้างการบริหารโรงแรม 2) ขอบข่ายการบริหารโรงแรม และ 3) กระบวนการบริหารโรงแรม โดยผู้ทรงคุณวุฒิมีความเห็นว่า รูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา มีความเหมาะสม และผู้บริหารสถานศึกษามีความเห็นว่า การนำรูปแบบการบริหารโรงแรมในสถานศึกษา สังกัดสำนักงานคณะกรรมการการอาชีวศึกษา ไปใช้ มีความเป็นไปได้อยู่ในระดับมากที่สุด

Abstract

The research aims to develop a hotel management model in educational institutes under the Office of Vocational Education Commission. The research procedure follows three phases: phase 1: studying the ways of hotel management in the educational institutes through interview method. Three educational institutes with best practice were purposely selected to explore the way of hotel management and four experts were interviewed for their opinions on hotel management. Data analyses were done through content analysis. Phase 2: drafting a tentative model for hotel management in the educational institutes based on the research results from phase 1, and the model was validated for its appropriateness through group discussion of nine experts in hotel management. Phase 3: evaluating the validated model for its feasibility and practicality through survey research for the opinions of hotel management administrators of educational institutes. Data analyses were done through means and standard deviations.

The findings revealed the following results: The hotel management model in educational institutes under the Office of Vocational Education Commission consists of 3 components:
1) The structure of hotel management 2) The scope of tasks in hotel management 3) The administrative process of hotel management. The constructed model has been validated and evaluated as appropriate, and highly feasible, by the selected experts in hotel management and the administrators of educational institutes, respectively.
