Development of Gummy Jelly Products from Melon Waste in Safe Agriculture Community Enterprise, Ban Pho District, Chachoengsao Province

Abstract
This research aimed to develop gummy jelly products from melon waste, providing a solution to reduce post-harvest losses, increase the value of melons, and generate additional income for farmers. The study was conducted within a safe agriculture community enterprise in Ban Pho District, Chachoengsao Province. The research involved four stages: 1) preliminary data collection, 2) investigating the effects of melon juice quantity, gelatin amount, and sugar ratio on the product, 3) developing a prototype product, and 4) evaluating product quality.
The results showed that: 1) approximately 30-50 kilograms of melon waste were generated daily by the enterprise. 2) The optimal formula included 300 g of melon juice, 150 g of gelatin, and 200 g of sugar. 3) The product met the community product standards for dried jelly, with a total microbial count below the permissible limit.
A small-scale market test was conducted at a technical college and a local store, with daily sales averaging 500-600 grams. Five food experts evaluated the product and found it excellent quality.
